MARINATED LAMB SKEWERS WITH CUCUMBER & BELL PEPPER SALAD

SERVES 4

2 garlic cloves, crushed

1 tsp. chopped rosemary

2 tsp. paprika

juice of ½ lemon

2 tbsp. olive oil

1lb. 2oz. boneless shoulder of lamb, cubed

2 cups seeded and chopped yellow bell peppers

2 cups seeded and chopped cucumber

handful parsley, chopped

salt and freshly ground black pepper

FOR THE DRESSING

2 ½ tsp. red wine vinegar

2 tbsp. olive oil

good pinch crushed dried chilies

Soak 8 to 12 bamboo skewers in water 20 minutes. Whisk together the garlic, rosemary, paprika, lemon juice, and oil and season well. Pour the mixture over the lamb, cover, and let marinate in the refrigerator at least 1 hour. Heat the broiler, thread the lamb onto the skewers, and broil 4 to 5 minutes on each side until cooked to your liking. Meanwhile, mix the bell peppers and cucumber in a bowl and scatter with the parsley. To make the dressing, whisk together the vinegar, oil, and dried chilies and season to taste with salt. Drizzle over the salad, toss to combine, then serve with the lamb skewers.
